  ABOUT OUR CHAPTER

The Chaîne des Rôtisseurs, Bailliage des Etats-Unis (United States division) unites professional and amateur gastronomes in a private, not-for-profit society committed to promoting the culinary arts and those of enology and hospitality through example, education and camaraderie.

Founded in 1977 Founded in 1977 by Leonard Sakrais the Miami Beach Bailliage of the Chaîne des Rôtisseurs has been, and continues to be, a very active chapter with 80 members.



OBJECTIVE

Based on the traditions and high standards of the medieval French guild of rôtisseurs, the organization celebrates the pleasures of the table, encourages the development of young professionals by awarding scholarships and sponsoring competitions, and, as part of an international organization, fosters friendships among members from around the world.The specific framework of La Chaîne, which makes it unique, calls for a combination of professional and amateur participation in its membership.



DEFINITIONS

Bailli - literally translated to bailiff or the head of chapter
Bailliage – translates to bailiwick means individual chapter
Chaîne – loosely translated means organization
Rôtisseurs – meat roaster
Confrérie – brotherhood or guild
Jeune Commis – young chefs
L’Ordre Mondial – wine society
